The Wyoming Wagyu Experience

August 2024|The history of Wagyu, our cattle ranch, and the health benefits of this exceptional beef.

It’s no secret that our guests have the opportunity to indulge in the very best epicurean experiences this side of the West. Whether you’re dining at the award-winning fine-dining restaurant Cheyenne Club or partaking in a Wagyu grilling experience, you’ll find that we take immense pride in the process of raising and producing quality Wagyu beef.

A Brief History of Wagyu & The Emperor’s Breed
Wagyu cattle can be traced all the way back to the second century AD, when they were introduced to the area now known as Japan by the original inhabitants of China and Korea. Until the Meiji Restoration in 1868, these animals were primarily utilized for agriculture, forestry, mining, and transportation purposes, as well as a great source of fertilizer. They were highly sought after and valued, but expensive, limiting access to small-scale farmers.

Before 1976 when the first Wagyu cows were brought to the US, Wagyu cattle were exclusive to Japan and were referred to as the “Emperor’s Breed”. Our Wagyu programs showcase Black and Red Wagyu known for their unmatched tenderness, rich buttery flavor, and intricate marbling that sets them apart from other types of beef. We are excited to offer our guests exclusive cuts of this delicacy, showcasing the finest marbled, ranch-raised 100% American Wagyu available.

The Art of Raising Our Cattle
Raising Wagyu is an intricate process that, if done correctly, leads to improved marbling, exceptionally tender meat, and a milder flavor due to reduced physical stress. Inspired by traditional Japanese methods, The Farm at Brush Creek Ranch follows a method that prioritizes top-notch care for healthy growth and development.

The Japanese method for raising Wagyu is known for being carried out with pride, as farmers prioritize raising their cattle in a humane manner. Wagyu cattle are carefully selected and bred to maintain the breed’s desired traits. The cattle are raised in a calm environment with plenty of room to graze, and are treated gently. They are often given massages and listen to classical music. They are known for being docile due to their frequent human interaction.

Health Benefits of Wagyu
Widely known for their unique intramuscular fat, Wagyu beef has also gained a reputation for its many health benefits. Wagyu meat contains a high concentration of monounsaturated fatty acids. It is also packed with protein, vitamins, and minerals like iron. The oleic acids and monounsaturated fats in Wagyu are much higher than those found in any domestic breeds in the United States. Furthermore, a connection has been made between the fatty acid Shimofuri and the decrease of cholesterol levels. Shimofuri also carries Omega-3, which is beneficial for the heart and brain.
